The Basmati Rice

Start by rinsing 2 cups of basmati rice under cold water until the water runs clear. Soak the rice in water for at least 30 minutes before cooking. 

In a large pot, bring 4 cups of water to a boil and add 1 teaspoon of salt. Drain the soaked rice and add it to the pot. Cook the rice on medium heat until it's tender but still slightly firm, about 8-10 minutes. Drain the rice and set it aside. 

Tip: If you want to add some color to the rice, you can also mix in a pinch of saffron threads soaked in warm water or some turmeric powder before cooking.


The Chicken


When it comes to biryani, chicken is a popular choice. For this recipe, you'll need boneless chicken thighs or breasts, cut into bite-sized pieces. You can also use bone-in chicken if you prefer.

To marinate the chicken, mix together 1 cup of plain yogurt, 1 tablespoon of ginger paste, 1 tablespoon of garlic paste, 1 tablespoon of cumin powder, 1 tablespoon of coriander powder, 1 tablespoon of garam masala, 1 teaspoon of turmeric, and salt to taste.

Add the chicken pieces to the marinade and mix well, making sure that each piece is coated evenly. Cover the bowl with plastic wrap and refrigerate for at least 2 hours, or overnight if possible.

When you're ready to cook the biryani, heat a large pan or Dutch oven over medium-high heat and add 3 tablespoons of oil. Once the oil is hot, add the marinated chicken and cook until it is browned on all sides, about 5 minutes.

Remove the chicken from the pan and set it aside. We'll be adding it back in later.

Finally, add the green beans and tomatoes and cook for a further 5 minutes until everything is cooked through.

Once your veggies are cooked, set them aside until it's time to add them to the rice mixture. The combination of crunchy bell peppers and juicy tomatoes, along with the earthy flavors of green beans and sweet caramelized onions, makes for a deliciously satisfying biryani. The Spices


When it comes to making biryani from scratch, the spices you choose are crucial in achieving that authentic and mouth-watering flavor. Indian cuisine is known for its use of a variety of aromatic and flavorful spices that add depth and complexity to dishes like biryani.

In a small bowl, combine 1 teaspoon of cumin seeds, 1 teaspoon of coriander seeds, 1 teaspoon of fennel seeds, 4 cardamom pods, 2 cinnamon sticks, 2 bay leaves, and 4 cloves. Using a mortar and pestle or a spice grinder, grind the spices until they are finely ground.

Add 1 teaspoon of turmeric powder and 1 tablespoon of garam masala powder to the spice mixture and mix well.

The spice mixture can now be added to the biryani. It's important to note that the amount of spices you use can vary based on your personal preference and the size of the dish you are making. Start with a small amount and add more gradually, tasting as you go.

The Sauce
